Sinanglay with Crab Stuffing

  • Yield 3 servings
  • 1 kilogram whole Red snapper, cleaned, scales and bones removed
  • 300 millilitres Coconut milk
  • 2 ripe Tomatoes, chopped
  • 1 Yellow Onion, finely chopped
  • An inch Ginger, chopped
  • 4 cloves of Garlic, chopped
  • A bunch of Tapioca leaves
  • 200 grams Crab meat and crab roe
  • 1 key Lime juice
  • Salt
  • Ground white pepper
  • Palm oil
  1. Marinate fish with lime juice for 10 minutes
  2. Heat a bit of palm oil in a pan and sautee garlic, onion and ginger till fragrant
  3. Add crab meat and chopped tapioca leaves, and cook for 3 minutes. leave it to cool
  4. Heat palm oil in a wok
  5. Stuff fish with cooked filling and seal using toothpicks. Deep fry fish in heated oil
  6. Heat a bit of palm oil in a sauce pan and cook tomatoes. Add crab roe and coconut milk. Add a bit of sugar, salt and ground white pepper. Serve deep fried fish with sauce
